A nice meal to cheer up a dull evening. The red of beetroot paratha and green of onion subzi goes really well. It tastes as delicious as it looks too :)

- 1 big bunch of green onion, chopped finely
- 1 dry red chilli
- 1 tsp garam masala
- 1 tsp dhania jeera powder
- 1 tsp red chilli powder
- 1.5 tsp amchoor powder ( dry mango powder )
- 1/2 tsp mustard seeds
- 1/2 tsp cumin seeds
- 1/2 tsp turmeric powder
- few curry leaves
- few chopped coriander leaves
- pinch of hing
- salt to taste
- 1 tbsp oil
- 2 cups wheat flour
- 1 large beetroot, grated
- 1/2 tsp red chilli powder
- 1/2 tsp ajwain seeds ( carom seeds )
- 1/2 tsp turmeric powder
- 1/tsp sesame seeds
- 1 small green chilli, finely chopped
- few chopped coriander leaves
- salt to taste
- 2 tsp oil
Method:
For Green Onion Subzi
- In a small bowl take 1/2 cup water and add garam masala, dhaniya-jeera powder, red chilli powder, amchoor powder, salt and curry leaves. Mix well and keep this spice mixture aside.
- Heat oil in a pan. Add mustard seeds, cumin seeds, hing and turmeric. Once the seeds start to crackle, add the spice mixture.
- Cook for a minute. Add the green onions and coriander leaves.
- Cook covered till oil separates.
- Turn off the heat.
- Ready to serve.
For Beetroot Parathas
- Mix all the ingredients and form a firm dough.
- Roll thin parathas with a rolling pin as shown below.
- Cook it with a few drops of oil on a flat pan as shown below.
- Ready to serve.
Do not add any extra water while cooking the onion subzi.
