Mexican Rice

This rice can be prepared in many ways. I make this way and it turns out really good. Hope you enjoy my version of this recipe.


1 tsp chilli flakes
1 tsp oregano
1/2 rajma ( kidney beans )
1 cup rice
2 medium tomatoes pureed
1 tsp ajwain seeds ( carrom seeds)
1/2 chopped green onions
1/2 capsicum finely chopped
salt to taste
1 tsp tomato ketchup
1 tsp olive oil
tabasco sauce ( optional, quantity as per taste )
Grated cheese ( optional )

  • Soak the rajma overnight. Pressure cook it and mash them once done.
  • Heat olive oil, add ajwain, green onions. Cook it for 2 minutes
  • Add capsicum, oregano, tomato puree, ketchup and salt. Cook this mixture till it becomes a little dry.
  • Add mashed rajma, chilli flakes and tabasco sauce.
  • Cook it for 10-15 minutes with lid covered.
  • Add rice and mix it well. Garnish with chilli flakes, cheese and spring onions. Serve hot.

Serving Suggestions:
This rice can also be used for burritos and goes along with Salsa ( see my salsa recipe )

Tip:Do not make the rajma mixture watery. Make sure it is dry and avoid adding water.
